Superior “Hearth” Crust The defining feature of a deck oven is conduction. By placing the dough directly onto the hot stone, heat is transferred immediately to the base of the loaf. This creates a sturdy, crisp bottom crust and drives heat upwards, giving breads like sourdough, baguettes, and ciabatta their rustic character and structural integrity.
Total Flexibility In a single-temperature rack oven, everything must bake at the same heat. A multi-deck oven (like the 4-deck model shown) is essentially four separate ovens in one chassis.
